&lt;p&gt;Spending most of my adolescence in North America I have somewhat of a soft spot for Halloween. Especially now having two kiddies of my own&amp;#8230; I loved watching my daughters face light up as we made these baked eerie creations :) I&amp;#8217;ve seen so many fantastic inspiring Halloween ideas making their way around Pinterest lately, that we decided to have our own little Halloween baking day on the weekend. These are a few treats we came up with. &amp;#8216;Witchy Fingers&amp;#8217;, &amp;#8216;Vampire Bites&amp;#8217; and &amp;#8216;Monster Eyeballs&amp;#8217;. I have to say my favourite are the &amp;#8216;Witchy Fingers&amp;#8217;! I love how they turned out. What an awesome little gift for your neighbours on Halloween eve.&lt;/p&gt;

&lt;p class="MsoNormal"&gt;&lt;span&gt;Ok here it is&amp;#8230; my first Little Ink tutorial. I made these cute ice-cream sugar cookies for my daughter&amp;#8217;s kindy gala tomorrow and thought it would be fun to share a few of my tips with you all&amp;#8230;. hope you enjoy!&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;First start by making the sugar cookies in your desired shape. I decided to use this fantastic ice-cream cutter I discovered in a set that I bought my daughter for play-doh a few years ago. Be on the look out… you can often find cool cutters in unexpected places… I’ve even seen somebody use the bottom of a crystal glass pressed into the cookie and it looked amazing!&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;There are quite a few sugar cookie recipes out there but I’ve found this to be the most reliable. It’s really great for cookie pops or intricate shapes as it has minimal spreading in the cooking process.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;&lt;em&gt;&lt;strong&gt;NOTE:&lt;/strong&gt; &lt;span&gt; &lt;/span&gt;If you are planning on making the cookies a few days before, store them in an airtight container un-iced as I’ve found they can get a little soft if you store them too long after icing due to the moisture.&lt;/em&gt;&lt;/span&gt;&lt;span&gt; &lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;&lt;strong&gt;THIS RECIPE MAKES ABOUT 25 COOKIES (depending on size)&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;&lt;span&gt;200g unsalted butter&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;200g castor sugar&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;1 egg lightly beaten&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;400g plain flour, plus more for dusting&lt;/span&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;ol&gt;&lt;li&gt;&lt;span&gt;With paddle attachment cream the butter, sugar and vanilla until well mixed and just creamy in texture. Do not overwork or the cookies will spread during baking.&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;Beat in the egg until well combined. Add the flour and mix on low speed until a dough forms.&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;Gather into a ball, wrap in plastic wrap and chill in the fridge for ½ hr.&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;Place the dough on a floured surface and knead briefly. Roll out to desired thickness and cut out shapes.&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;Bake at 180 for 8-12min or until slightly golden. Cool on wire rack.&lt;/span&gt;&lt;/li&gt;
&lt;/ol&gt;&lt;p class="MsoNormal"&gt;&lt;span&gt;Once the cookies are completely cool you can get into the fun part…decorating! &lt;/span&gt;&lt;span&gt;I use this basic recipe from Wilton using their ColorFlow powder for my icing.&lt;/span&gt;&lt;/p&gt;
&lt;ul type="disc"&gt;&lt;li class="MsoNormal"&gt;&lt;span&gt;Approximately 1/4 cup water &lt;/span&gt;&lt;/li&gt;
&lt;li class="MsoNormal"&gt;&lt;span&gt;4 cups icing sugar sifted &lt;/span&gt;&lt;/li&gt;
&lt;li class="MsoNormal"&gt;&lt;span&gt;&lt;a href="http://www.wilton.com/store/site/product.cfm?sku=701-47" target="_blank"&gt;&lt;span&gt;2 tablespoons Color Flow Mix&lt;/span&gt;&lt;/a&gt;&lt;/span&gt;&lt;span&gt; powder&lt;/span&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;div&gt;&lt;ol&gt;&lt;li&gt;Add half the water to the icing sugar and powder and start mixing…slowly adding in the remainder of the water as you mix. &lt;/li&gt;
&lt;li&gt;Continue on med-high for approximately 5 minutes until it starts to look glossy.&lt;/li&gt;
&lt;/ol&gt;&lt;/div&gt;
&lt;p class="MsoNormal"&gt;&lt;em&gt;&lt;span&gt;&lt;strong&gt;NOTE:&lt;/strong&gt; Be careful not to add too much water. A great test that you’ve reached the right consistency is; dip a spoon in your icing and after you pull it out you want the crest of icing to disappear into a smooth surface after about 10-15 seconds.&lt;/span&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;em&gt;&lt;span&gt;Keep the icing covered (I use a damp paper towel) as it can quickly form a crusty surface as it starts to harden.&lt;/span&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;em&gt;&lt;span&gt;This icing is also great for making little flowers and other decorations to use at a later date. All you need to do is make a thicker mixture of icing suitable for piping and, once hardened, store your pieces in an airtight container.&lt;/span&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;strong&gt;&lt;span&gt;TIPS ON ICING&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p class="MsoListParagraphCxSpFirst"&gt;&lt;span&gt;&lt;span&gt;1.&lt;span&gt;     &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;span&gt;Practice! :)&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoListParagraphCxSpMiddle"&gt;&lt;span&gt;&lt;span&gt;2.&lt;span&gt;     &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;span&gt;Start on the outer edge…. create an outline and then slowly work your way to the centre as shown in the pic below.&lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoListParagraphCxSpMiddle"&gt;&lt;span&gt;&lt;span&gt;3.&lt;span&gt;     &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;span&gt;If you very gently tap the cookie and wiggle it from side to side the icing tends to settle to a smooth surface quicker.&lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoNoSpacing"&gt;&lt;em&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;/em&gt;&lt;span&gt;&lt;span&gt;   &lt;/span&gt;&lt;/span&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;3/4 cup cocoa powder&lt;/li&gt;
&lt;li&gt;2/3 cup sour cream&lt;/li&gt;
&lt;li&gt;2&amp;#160;2/3 cups cups all-purpose flour, plus more for pans&lt;/li&gt;
&lt;li&gt;2 teaspoons baking powder&lt;/li&gt;
&lt;li&gt;1 teaspoon baking soda&lt;/li&gt;
&lt;li&gt;1/2 teaspoon salt&lt;/li&gt;
&lt;li&gt;3/4 cup (1&amp;#160;1/2 sticks) unsalted butter, softened, plus more for pans&lt;/li&gt;
&lt;li&gt;1/2 cup vegetable shortening&lt;/li&gt;
&lt;li&gt;1&amp;#160;1/2 cups granulated sugar&lt;/li&gt;
&lt;li&gt;1 cup dark brown sugar&lt;/li&gt;
&lt;li&gt;3 large eggs&lt;/li&gt;
&lt;li&gt;1 tablespoon pure vanilla&lt;/li&gt;
&lt;li&gt;1/2 cup Salted Caramel&lt;/li&gt;
&lt;li&gt;Whipped Caramel Ganache Icing&lt;/li&gt;
&lt;li&gt;Fleur de sel, for garnish&lt;/li&gt;
&lt;/ul&gt;&lt;p class="MsoNoSpacing"&gt;&lt;em&gt;&lt;strong&gt;Directions&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;Preheat oven to 325 degrees. Butter three 8-by-2-inch round cake pans. Line each pan with a parchment paper round, butter parchment paper and flour; set aside.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;In a large bowl, whisk together cocoa, 1&amp;#160;1/4 cups hot water, and sour cream; set aside to cool, about 10 minutes.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;In another large bowl, sift together flour, baking powder, baking soda, and salt; set aside.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and shortening together until smooth and it appears to create strings inside the bowl, about 7 minutes. Add both sugars and continue beating until light and fluffy, about 7 minutes. Add eggs, one at a time, and beat until well incorporated. Add vanilla, scrape down the sides of the bowl with a spatula, and mix again for 30 seconds. Add flour mixture alternating with cocoa mixture, beginning and ending with flour mixture.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;Divide batter evenly among the three prepared pans. Bake until cake is just firm to the touch and a toothpick inserted into the center of the cake comes out clean, 18 to 24 minutes. Let cool completely.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;em&gt;&lt;strong&gt;To Make the Salted Caramel&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;em&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 cup sugar&lt;/li&gt;
&lt;li&gt;2 tablespoons light corn syrup&lt;/li&gt;
&lt;li&gt;1/2 cup heavy cream&lt;/li&gt;
&lt;li&gt;1 teaspoon fleur de sel&lt;/li&gt;
&lt;li&gt;1/4 cup sour cream&lt;/li&gt;
&lt;/ul&gt;&lt;p class="MsoNoSpacing"&gt;&lt;strong&gt;&lt;em&gt;Directions&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;Combine 1/4 cup water, sugar, and corn syrup in a medium saucepan; stir to combine. Bring to a boil over high heat. Cook until the mixture reaches 350 degrees on a candy thermometer, about 10 minutes.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;Meanwhile, in another small saucepan, mix together cream and salt. Bring cream to a boil and cook until salt has dissolved, 3 to 5 minutes. Remove from heat and set aside.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;When the caramel mixture has reached 350 degrees, remove from heat and allow to cool for 1 minute. Carefully add the hot cream to the caramel; stir to combine. Whisk in sour cream. Cool, and store in an airtight container, refrigerated, for up to 3 days.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;em&gt;&lt;strong&gt;To Make the Whipped Caramel Ganache Icing&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;em&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 pound dark chocolate, chopped&lt;/li&gt;
&lt;li&gt;1 cup sugar&lt;/li&gt;
&lt;li&gt;2 tablespoons light corn syrup&lt;/li&gt;
&lt;li&gt;1&amp;#160;1/2 cups heavy cream&lt;/li&gt;
&lt;li&gt;1 pound (4 sticks) butter, cut into tablespoon-sized pieces, softened but still cool&lt;/li&gt;
&lt;/ul&gt;&lt;p class="MsoNoSpacing"&gt;&lt;em&gt;&lt;strong&gt;Directions&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;

Let sit 1 minute before stirring from the center until chocolate is melted.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;Attach bowl to electric mixer fitted with the paddle attachment and mix on low until the bowl feels cool to the touch. Add butter and increase speed to medium-high until mixture is well combined, thickened, and slightly whipped, about 2 minutes.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;em&gt;&lt;strong&gt;Assembling the Cake&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p class="MsoNoSpacing"&gt;&lt;span&gt;Using a serrated knife, trim tops of cakes to make level. Place four strips of parchment paper around perimeter of a serving plate or lazy Susan. Place the first layer on the cake plate. Using about 1/4 cup of the caramel, spread a thin layer on the cake, allowing some of the caramel to soak into the cake. Follow the caramel layer with a layer of about 1 cup of the ganache icing. Place the second layer on top and repeat process with another layer of caramel followed by a layer of ganache icing. Place the remaining layer on top of the second layer bottom side up. Spread entire cake with remaining ganache icing. Sprinkle with fleur de sel.&lt;br/&gt;&lt;img src="http://media.tumblr.com/tumblr_m7x2icmXrq1r4x0kx.jpg"/&gt;&lt;/span&gt;&lt;/p&gt;

&lt;ul class="ingredientsList"&gt;&lt;li class="ingredient"&gt;1&amp;#160;1/2 cups cake flour&lt;/li&gt;
&lt;li class="ingredient"&gt;1&amp;#160;1/2 cups all-purpose flour&lt;/li&gt;
&lt;li class="ingredient"&gt;2 teaspoons baking powder&lt;/li&gt;
&lt;li class="ingredient"&gt;1/4 teaspoon baking soda&lt;/li&gt;
&lt;li class="ingredient"&gt;1 teaspoon salt&lt;/li&gt;
&lt;li class="ingredient"&gt;2&amp;#160;1/4 cups sugar&lt;/li&gt;
&lt;li class="ingredient"&gt;8 large eggs, at room temperature&lt;/li&gt;
&lt;li class="ingredient"&gt;1/4 cup grated lemon zest (from about 4 lemons)&lt;/li&gt;
&lt;li class="ingredient"&gt;1/4 cup fresh lemon juice&lt;/li&gt;
&lt;li class="ingredient"&gt;2 cups (4 sticks) unsalted butter, melted and cooled&lt;/li&gt;
&lt;li class="ingredient"&gt;1/2 cup sour cream, at room temperature&lt;/li&gt;
&lt;li class="ingredient"&gt;2 teaspoons pure vanilla extract&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;br/&gt;&lt;strong&gt;FOR THE LEMON SYRUP&lt;/strong&gt;&lt;/p&gt;
&lt;ul class="ingredientsList"&gt;&lt;li class="ingredient"&gt;1/3 cup fresh lemon juice&lt;/li&gt;
&lt;li class="ingredient"&gt;1/3 cup sugar&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;br/&gt;&lt;strong&gt;FOR THE LEMON GLAZE (OPTIONAL)&lt;/strong&gt;&lt;/p&gt;
&lt;ul class="ingredientsList"&gt;&lt;li class="ingredient"&gt;2 cups confectioners&amp;#8217; sugar, sifted, or more if needed&lt;/li&gt;
&lt;li class="ingredient"&gt;4 to 6 tablespoons fresh lemon juice&lt;/li&gt;
&lt;/ul&gt;&lt;div&gt;&lt;/div&gt;
&lt;div&gt;
&lt;p class="instruction"&gt;&lt;strong&gt;DIRECTIONS&lt;br/&gt;MAKE THE LEMON CAKES&lt;/strong&gt;&lt;br/&gt;Preheat the oven to 350 degrees F. Spray the sides and bottom of two 9-by-5-by-3-inch loaf pans with nonstick cooking spray. Line the bottom with parchment paper and spray the paper.&lt;/p&gt;
&lt;p class="instruction"&gt;Sift both flours, baking powder, baking soda, and salt together in a medium bowl.&lt;/p&gt;
&lt;p class="instruction"&gt;Put the sugar, eggs, lemon zest, and lemon juice in a food processor and pulse until combined. With the motor running, drizzle the butter in through the feed tube. Add the sour cream and vanilla and pulse until combined. Transfer the mixture to a large bowl.&lt;/p&gt;
&lt;p class="instruction"&gt;Sprinkle the flour mixture, one third at a time, folding gently after each addition until just combined. Do not overmix.&lt;/p&gt;
&lt;p class="instruction"&gt;Divide the batter evenly between the prepared pans. Bake in the center of the oven for 20 minutes, rotate the pans, reduce the oven temperature to 325 degrees F., and bake for another 30 to 35 minutes, or until a toothpick inserted in the center of the loaf comes out clean.&lt;/p&gt;
&lt;p class="instruction"&gt;Let cool in the pans for 15 minutes.&lt;/p&gt;
&lt;p class="instruction"&gt;&lt;strong&gt;&lt;br/&gt;MEANWHILE, MAKE THE LEMON SYRUP&lt;/strong&gt;&lt;br/&gt;In a small saucepan over medium heat, heat the lemon juice and sugar until the sugar is completely dissolved. Once dissolved, continue to cook for 3 more minutes. Remove from the heat and set aside.&lt;/p&gt;
&lt;p class="instruction"&gt;Line a half sheet pan with parchment paper and invert the loaves onto the pan. Use a toothpick to poke holes in the tops and sides of the loaves.&lt;/p&gt;
&lt;p class="instruction"&gt;Brush the tops and sides of the loaves with the lemon syrup. Let the syrup soak into the cake and brush again. Let the cakes cool completely, at least 30 minutes.&lt;/p&gt;
&lt;p class="instruction"&gt;(The soaked but unglazed loaves will keep, wrapped in two layers of plastic wrap and frozen, for up to 6 weeks.)&lt;/p&gt;
&lt;p class="instruction"&gt;&lt;strong&gt;&lt;br/&gt;IF YOU LIKE, MAKE THE LEMON GLAZE&lt;/strong&gt;&lt;br/&gt;In a small bowl, whisk together the confectioners&amp;#8217; sugar and 4 tablespoons of the lemon juice. The mixture should be thick but pourable. If the mixture is too stiff, add up to another 2 tablespoons lemon juice and whisk again, adding small amounts of lemon juice and/or confectioners&amp;#8217; sugar until you get the right consistency. Pour the lemon glaze over the top of each loaf and let it drip down the sides. Let the lemon glaze harden, about 15 minutes, before serving.&lt;/p&gt;
&lt;p class="instruction"&gt;The glazed loaves will keep for up to 3 days, wrapped tightly in plastic wrap, at room temperature.&lt;/p&gt;
